The region of Santa Rosa gets just about the perfect amount of rainfall that timely falls for coffee to grow. However, during harvest season, the region is typically very dry. This allows the coffee to slowly ripen fully while on the tree, and famers sufficient time to pick them without threat on rain. The scarcity of water during harvest season has resulted in a coffee culture of small farmers selling their cherries to a wet mill to process their coffee.
 
The cherry mill that processes this coffee is located on a farm called El Retiro, in the heart of the Ayarza region. Getting to the cherry mill takes over an hour of 4x4 driving on rough roads. At 1500 meters above sea level, the surrounding area has coffee grown up to 1900 meters. In order to access this coffee, Olam has installed a team of cherrybuyers to operate this mill in this very remote region so that we can get the coffee before it is blended by intermediaries. This access to each individual quality lots and day lots has provided us with this coffee that we hope you'll enjoy.
