Grown at elevations of 1200 - 1350 meters in Bali, this arabica microlot uses the innovative carbonic maceration process to redefine your perception of Balinese and Indonesian coffee.
After careful selection and handpicking, cherries are soaked in a ceramic tank, and then undergo a 10-hour dry fermentation in a water channel. This is followed by a controlled 62-hour fermentation in a CO2-rich environment. The cherries are sun-dried to 10% moisture, stored, and finally dry hulled, resulting in a unique and pleasant aroma with distinctive flavors.
