After careful selection and handpicking, cherries are soaked in a ceramic tank, and then undergo a 10-hour dry fermentation in a water channel. This is followed by a controlled 62-hour fermentation in a CO2-rich environment. The cherries are sun-dried to 10% moisture, stored, and finally dry hulled, resulting in a unique and pleasant aroma with distinctive flavors. We hope this innovative coffee excites you about Southeast Asian coffee as much as it has for us!
